
Also make sure you keep grabbing its villages while he's advancing. Just make sure you rotate them (heal the wounded behind your lines). Even spearman only counter AI based skeletons. If you place your unit next to an enemy one, it's still not a reason to attack it. Only attack, when you have a good reason to. And Undead in general are one of, if not the faction you will FEEL the difference between night and day playing against them most. Skeletons are highly counterable - if you get the right units they will die fast and very cost-efficiently, if you don't, you will suffer. If your opponent arrives with forces that outcounter you, you need to retreat and get counter units. Don't attack skeletons at night - let your HI defend against them if you must, but have them stay on villages. Cavalry at day will be superior to skeleton warriors in melee since blade is marginally more effective than pierce (also they resist blade themselves), so you just might be able to use them.

No point in having your units go down while your heavy infantry marches! Better let the skeletons take some villages, get slaughtered by heavy infantry and mages, and you still have your other units to form the counter attack with. If you know your forces are ineffective, retreat them to wait for your effective counters (mages, HI) to arrive. What's your standard recruit exactly? Maybe it needs some more flexibility.
